A first for Hillside Estate, this 100% stainless fermented Pinot Gris shines with fresh fruit. Fragrances of white peach, citrus and melon are backed by a bright core of tree-fruit flavours that lend a mid palate lustre. Finished dry.

This wine pairs well with summer salads, seafood dishes and grilled chicken.
Winemaking
After 2 to 3 hour skin contact, draining and cold settling, vineyard blocks were fermented separately in stainless steel to evaluate fruit characteristics and terroir influences. Once dry, lees-stirring of some batches served to fill out the mid-palate, while final blending achieved the optimum balance of fragrance and flavour for this wine.
