Fresh-cut grass and golden plum, fresh fig, tree fruit with a touch of citrus and tropical.
About this wine
A cool new collaboration with our Chef Evan Robertson, the possibility of this blend was presented when we contracted a small block of Sauvignon Blanc and Chardonnay. The yield was so small they had to be pressed together. Our first ferment in the terracotta jarre built a lovely complexity and allowed extended lees contact. Some Semillon harvested from the Thomas Vineyard, and fermented in stainless at Tightrope Winery really rounds out the flavours. A nice addition to our white portfolio, this gives our bistro some great pairing possibilities.
